Ainaas / Madakku

A crispy and delicate delight from my grandmother's recipe collection, Ainaas (also known as Madakku) is a popular tea-time snack from Malabar. Thin sheets of dough, made with maida, are rolled, folded, and deep-fried until they turn golden and crispy. The hot rolls are then lightly coated in a sweet sugar syrup, creating a perfect balance of crispy texture and subtle sweetness.
